BUDGET FRIENDLY 10 MIN BURRITO BOWL

This is a budget friendly meal that I like to make in a pinch if I’m craving a warm and grounding meal that will keep me full and satisfied. I bought all my ingredients at Whole Foods, but you can find them at any grocery store near you. Feel free to get creative with your seasonings and make this your own!



Ingredients

  • ½ cup canned organic black beans

  • ¼ cup hot salsa

  • Hot sauce of choice

  • Lime juice

  • 1 head organic romaine lettuce

  • 1 cup frozen organic white jasmine rice

  • 1 cup organic frozen cauliflower rice

  • Seasoning of choice, I used Trader Joe’s 21 Seasoning Salute.

  • Optional: vegan cheese shreds, nutritional yeast, or avocado


Instructions

1. Cut up your head of romaine lettuce. Put it in a bowl and put it aside.

2. Put cauliflower rice and white rice in a nonstick pan and sauté for about 7-9 mins until cooked. Add ½ cup of black beans, salsa, seasoning, lime juice, hot sauce and stir for about 2-3 minutes until desired result.

3. Scoop burrito mixture into lettuce bowl and enjoy! Top with vegan cheddar shreds or nutritional yeast for a cheesy touch.
